Our brisket cut is from the breastbone area, or more specifically, the chest or pectoral muscle of the steer. It is one of THE most flavorful cuts of beef. Because the brisket is a fatty cut, it can tenderize into a VERY succulent meal when cooked on low heat for a long period of time in a slow cooker or smoker. We like the brisket cut up for sandwiches or sliders.
