The flank steak is beef that has been cut from the belly of the steer. Because of the connective tissue, this makes it one of the less tender cuts of beef, but extremely flavorful. We usually only get 3 small flank steaks, or 1 large flank per steer. It is a very popular cut because it is used in a variety of dishes. Flank can be marinated (so it doesn’t dry out) and grilled, but a good rule of thumb is to slice it against the grain, so it isn’t chewy. Another good way to cook flank steak is to braise, so it breaks down the fibers.
