Our New York Strip is cut to a hearty 1" thickness from the center of the short loin in the steer. The closer to the front of the loin, the more tender. It is a highly desirable cut because of the tenderness and flavor of the meat. The tenderness of this particular cut comes from the fact that this muscle does not get much exercise, so it holds the flavor and juice much better when cooked. We recommend grilling or cooking in a cast iron skillet to get the full flavor of our New York Strip.
